    Loved Kimi's Valencay sooooo much went down to The Beverage People today and got all the ingredients, pyramid molds, etc. Luckily Kimi was there and shared her recipe! It's in the current version of the catalogue: http://www.thebeveragepeople.com/pdf/webcheesepdf/Valencay.pdf Option: add a half pint of cream or half and half to this recipe. Kimi used cream. It was very flavorful and wonderful creamy textures under the rind, then more firm in the center.

    So this was a humbling experience. I unmolded my Valencay too early and created these dumplings! However they taste pretty good!
