    If you’re using Napa cabbage, toss the cabbage with the dressing for 40-45 minutes in order for the flavors from the dressing to absorb into the cabbage without making the cabbage soggy. I haven’t made this salad in a long time so I forgot to do that today. I also usually add 2 tablespoons of soy sauce but I didn’t do that today because I wasn’t sure if everyone would like it. From the taste of it today, I’d suggest using 2 tablespoons of soy sauce for the full flavor.

    If using regular lettuce, toss the dressing with the lettuce for about 10-15 minutes.

    Asian Salad with Crunchy Sesame-Noodles Topping

    Salad
    • 2 heads romaine or Napa cabbage (chopped)

    Topping
    • 1/2 cup butter
    • 2 Tbsp sugar
    • 1/2 cup sesame seeds
    • 3 oz sliced almonds
    • 1 pack Ramen noodles, uncooked, broken up, do not use seasoning

    Dressing
    • 3/4 cup vegetable oil
    • 1/2 cup sugar
    • 1/4 cup red wine vinegar
    • 2 Tbsp soy sauce

    Directions
    In a large skillet, melt butter then add sugar, sesame seeds, almonds and noodles over medium heat until lightly brown. Cool.

    Don’t add the topping until serving to retain its crunchiness.
