    The following appetizer made with red wine is one of my favorites. I encourage everyone to try it, It's very easy to make.

    INGREDIENTS:
    1 small baguette, cut on the diagonal into slices (Yields about 20 slices- Serves 6 or more)

    3 tablespoons olive oil
    1/2 cup chopped dried Mission figs
    1/4 cup light-brown sugar
    1 cup dry red wine
    5 ounces goat or feta cheese
    PREPARATION:
    STEP 1: Heat broiler.(Toaster oven also works well) Brush both sides of baguette slices with oil; place on a baking sheet. Broil or toast until golden, 1 to 2 minutes per side; set toasts aside.
    STEP 2
: In a small saucepan, combine figs, sugar and wine. Bring to a boil; reduce to a simmer, and cook until thickened, 7 to 9 minutes. Let compote cool to room temperature.
    STEP 3: 
Dividing evenly, spread each toast with goat or feta cheese, and top with compote. Bon appétit!
