Dex did a presentation back in March on 1.5 to 1.6 upgrade, it should be similar for 1.5 to 1.7

Welcome aboard. Joomla 1.5 is the current long term release due for end of life in Apr 2012, although most likely it will be used beyond that date. Joomla 1.7 is the latest short term release, with end of life Feb 2012. Joomla 2.5 is the next long term release due in Jan 2012 and has end of life Aug 2013.
If you're teaching Joomla next year, I'd stick with Joomla 2.5 when it's released, which will be pretty similar to what you see currently in Joomla 1.7.
