Jess kindly invited some of us to her place for a awesome home cooked Mexican dinner! I assume Jess has nothing against a little help but she will make the Mexican dinner we will all be greatful to eat! Since we all know good Mexican food is hard to come by in these parts, join me for a home cooked Mexican dinner prepared by someone who grew up eating everything from tacos to menudo and at one point even had a cow living in her backyard.
I thought I'd prepare one of my all-time favorite Mexican dishes that is specially prepared around the Christmas holidays and goes back all the way to precolonial times.
For those that haven't heard of POZOLE, it's a spicy stew made with hominy and, in this case, pork shoulder simmered to tender perfection. To serve, it is topped with fresh green cabbage, radishes, and avocado with crunchy tostadas on the side.
Things to bring:
- Please bring 55 kr with you! I have to special order the ingredients online and shipping costs get pretty steep.
- Wine or alcoholic beverage you desire. I'll provide water and soda.
- A bowl to eat out of and a spoon. I only have a dining set for 4.
- A couple people will have to bring a chair. We can sort this out after we have everyone signed up.
