Hi Lavender -  I use the EnerG egg replacer when I bake muffins.  I do make them from scratch, but they rise and turn out beautifully.  
I've really grown as a baker since becoming Vegan, substituting this for that and experimenting.  Perhaps this is a good opportunity to discover the baker in you and start from scratch :)

Dear JD, I want to start eating the vegan way (because I am so against factory farms) but I love chocolate cake. I have tried to put other things in the cake mix like applesauce and something called EnerG egg replacer. The applesauce did not work good because it made the cake taste like apples and I called the EnerG company and they said the egg replacer did not make the cake fluff because you must make the cake from scratch for it to fluff. Do you know of an egg replacer that you can put in a cake mix bought from the store?
