Take a break from cooking, Fearless Foodies, and be prepared for a very special treat. Chef and Fearless Foodies member, Chip Bergeron, has a lesson or two on the Five Mother Sauces with the History of Cajun and Creole Cooking and Culture. He will provide us with information on what the Five Mother Sauces are and how to make them starting from a basic roux. Then on to a hands-on demo of Cajun Gumbo from scratch starting with a roux. As an extra special treat, for dessert Chef Chip will prepare Bananas Foster, a New Orleans favorite. Appetizers and beverages will be served during the demo and lecture.
Chef Chip Bergeron graduated from The Culinary Institute of New Orleans in 1999. He has 15 years of professional culinary experience and worked in the kitchen's of Paul Prudhomme and Emeril Lagasse in New Orleans.
