Laisse' le Bon Temps Rouler! A Cajun Family Style Dinner

Let the good times roll!

Take a break from cooking, Fearless Foodies, and be prepared for a very special treat. Chef and Fearless Foodies member, Chip Bergeron, has a lesson or two on the Five Mother Sauces with the History of Cajun and Creole Cooking and Culture. He will provide us with information on what the Five Mother Sauces are and how to make them starting from a basic roux. Then on to a hands-on demo of Cajun Gumbo from scratch starting with a roux. As an extra special treat, for dessert Chef Chip will prepare Bananas Foster, a New Orleans favorite. Appetizers and beverages will be served during the demo and lecture.

Chef Chip Bergeron graduated from The Culinary Institute of New Orleans in 1999. He has 15 years of professional culinary experience and worked in the kitchen's of Paul Prudhomme and Emeril Lagasse in New Orleans.

Chip and his lovely wife, Mimi, are hosting this event from their home in Avery Ranch.  The address and info on parking will be e-mailed out 2 days before the event.

    Perhaps we can start a "Country of the Month" club as a permanent ongoing monthly event. I am certain that Chip can fill in the many secrets of truly authentic cuisines. After each gourmet feast we can have a drawing which country will be the next. I also believe that Mimi's and Chip's welcoming Inn could accommodate about 20 Fearless.

    Michelle I'd luv to be part of the leadership team if you would like or if anyone in the group needs help or advice with anything concerning cooking . I truely hope everyone had good time at the demo an look forward to doing many more down the line at a bigger venue .
    That way no one gets left out hopefully . luv ya all and good cooking an good eating . sincerly chip .

    Michelle the pic's you took at the demo were outstanding I would luv it if I could get a copy of them to put in my portfolio . I would luv to be an organizer for the group . Mimi and I have a lot of fun at all the demos . I still have a lot of cooking knowledge that i'd luv to continue to share with the group . keep me in the loop if you guys need anything .

Thank you both so very much for your hard work that went into the preparation of this well planned presentation. The Gumbo was truly a mouthwatering delight and so was the flamed dessert. Excellent!

    Hi everyone well it's almost time for the demo . I'm putting the final touches on the house with honey do's . I'm going to the printer's today to print out the demo packet for everyone .For those of you that are on the waiting do not worry michelle and I have talked and due your excitement an intrest in learning Cajun & Creole cooking . I hope to have a part Deux . When I don't know but just keep your eyes out for it . Look forward to seeing you all in the future good cooking .

    Two weeks and counting to demo . Just wanted to post this tid bit of info for you all . If you all are really intrested in cajun cooking check out create on chanel 18 they have been featuring all the great chef's of Louisiana. Especially my mentor's Chefs' Paul Prudhomme and John Folse .they will most continue to air until the day after Mardi Gras .Make sure to check it out if you can great recipes and history lessons of our culture .
