Food: Lets put our requirements here.
I do not like beef/pork but would be happy to contribute if everyone else likes those. I try them occasionally but never got used to anything other than ham and sausage.

I am not good at estimating what we need but here is some of the stuff that I think we need. Feel free to add more or remove some of these Do we have a head count so we can start figuring numbers to buy? I think we are sticking to magic number 9 as we are limited by the amount of people at the camp site

I am ok with cooking for everybody if you agree on the menu. I will eat everything which is hot, over the fire and eatable. I found a couple of recipes that should be good for cold nights. Chicken Cacciatore Stoup by Rachel Rae & Tortilla Soup by Sandra Lee on Foodnetwork website. For lunch I think we should grill meats for sandwiches. Sliced meat or we are marinating meat to do open flames stuff? I wasn't sure if we plan to hike or not. Do we need portable foods? Or wrap up our sandwiches for the trail. Yes and yes, and yes I think We can cook ahead for Sun afternoon and mainly cook dinner that night. I'm counting on Oleks burner if it's raining. Don't know what people like for breakfast....oatmeal & fruit...eggs, toast, bacon...french toast? omg-omg-omg someone mentioned bacon! If everyone will be eating I will get like 2 dozens of eggs and pack of bacon for breakfast. It's a bad time to be on diet at camping ) I am all for high protein meat like beef, pork and lamb. Willing to marinate meat prior to camping if enough people chime that they are interested.

Fruits [Bananas / Oranges / Melons /Apples]
Green/Red Lettuce
Bread
Meat [I vote for chicken but since we cant store it we may have to but it some where close by or get some tinned meat] Let's get fresh chicken and turkey or chicken sausages. I have a smaller cooler that can be dedicated to raw meats, in addition to my regular sized cooler. Or vice versa depending on how much we need. The meat shouldn't be a problem with ice for a couple of nights. Are we stacking up on ice like 2 packs per cooler?
Vegetables [Whatever I don't know if we need these] Yes, we do need veggies. Tomatoes, red onions, bell peppers & spinach. In addition to the stuff for the hot meals, I think we should get hummus and carrots or make guacamole for chips. Something snack like for the board games. And tortilla corn chips may be?
milk (any lactose intolerant?) Kefir?
eggs
Salt
Pepper
Seasoned Salt [I will bring]
Boards [Karen is bringing one, I can bring another one]
Axe [Karen is bringing and one is enough]
Paper Plates
Bowls (If we use the recipes I mentioned.) I am all for it
Cups (I suggest bringing your own reusable, insulated coffee or tea mug.) True words

Menu.. c'mon I don't want to dictate the menu.. I am up for whatever. I may not eat pigs and cows but will be up for the rest ;)

Krishna, nothing goes as planned ever, so, menu needed to figure out what needs to be purchased and gives a picture if too much or too little. :)

Food that needs to be purchased:

Breakfast

Dinner

Chicken Cacciatore Stoup by Rachel Rae
Ingredients:
- 1 package boneless, skinless chicken breasts , 1 to 1 1/3 pounds, diced
- Coarse salt and black pepper
- 1/2 teaspoon crushed red pepper flakes
- 3 to 4 tablespoons extra-virgin olive oil, 3 turns of the pan
- 2 russet potatoes , peeled and cubed into 1-inch squares
- 4 portobello mushroom caps or 16 cremini mushrooms , sliced or chopped
- 4 ribs celery hearts, chopped
- 1 medium onion, peeled and quartered lengthwise then thinly sliced
- 1 red bell pepper , seeded and quartered lengthwise then thinly sliced
- 4 cloves garlic , chopped
- 1/2 cup dry Italian red wine, eyeball it
- 1 (15-ounce) can diced tomatoes
- 1 (28-ounce) can fire-roasted crushed tomatoes
- 2 cups chicken stock
- 3 tablespoons fresh rosemary, finely chopped, 3 or 4 sprigs
- 1 cup basil, arugula or baby spinach leaves, shredded or torn
- Grated Parmigiano-Reggiano or Romano, to pass at table
- Crusty bread, to pass at the table

Tortilla Soup
Ingredients
- 1 tablespoon canola or vegetable oil
- 1 cup diced red onion
- 1 1/4 pounds ground turkey breast [turkey??]
- 4 cups chicken stock
- 1 teaspoon crushed garlic
- 1 (4-ounce) can diced green chiles
- 3/4 cup tomato puree
- 1 tablespoon enchilada sauce mix (recommended: Lawry's)
- 1 avocado, pit removed, flesh chopped
- 1 cup shredded Mexican-cheese blend
- 3/4 cup crushed baked blue corn chips (recommended: Guiltless Gourmet)
- 1/4 cup sour cream
- 1/4 cup finely chopped fresh cilantro leaves

Other food needed:

Potatoes
Green/Red Lettuce
Bread - around 3 loafs
Fresh chicken and turkey or chicken sausages. As I am not buying into that chicken is a meat (it's a bird), I will be grabbing some pork/lamb :)

Hi all! I am going with Carl and because he is still up in Tahoe I am just going to respond for the two of us. We will do some shopping tonight and gonna try our best to cover all the food that is still needed on the list or if anyone could let us know the breakdown? We will also bring some drinks like beer and wine for the group. We have all the gears for two, an ice-cooler and snacks packed in the car. Look forward to meeting you all tomorrow!:-)

Hi Tina,

We are going to stop on the way at Walmart. So you may not want to buy too much unless you want something specific. I tried calling Carl. Can you let me know if you guys can come to Holloway and 19th by 8Am and we leave my car and your car there and carpool with everyone.

BTW, I can't find my pad so if someone has a spare one I don't want to sleep directly on the ground. I have a sleeping bag though.
