What are your favorite cuisines? (Italian, Chinese etc.)

I love ethnic foods, especially Thai and Japanese...well, also Mexican, African, Italian, fine American...oh, let's face it, I'm just a foodie. Anything but McDonalds! I'd rather go hungry than eat bad food.
