Chinese cooking is generally acknowledged as one of the leading cuisines in the world. Conventional wisdom lists four major schools of Chinese cooking - Beijing or Northern, Shanghai or Eastern, Guangzhou or Southern and Sichuan or Western. Each of these schools has its own distinctive style and ingredients. However, this is a simplification, there are many sub-schools within this divide, such as the cooking of Hunan, Fujian, Taiwan, Hainan Island, Chaozhou and Kejia (Hakka). Furthermore, the Overseas Chinese communities have spawned their own styles. In Britain, the Guangzhou school is dominant in local restaurants due to historic ties with Hong Kong, and most British people know Chinese food through the local takeaways with their gloopy sauces and greasy offerings, a travesty of genuine Chinese food. This group is open to anyone who loves Chinese food in its various forms and wish to know more about it; you don't have to be either Chinese or a cook to join us. We aim to explore and enjoy the resources available to us in London for the preparation and consumption of real Chinese food - you will never look at your Saturday night's takeaway in the same way again!
