I read a post several days ago elsewhere about this. Might have been Ed Brayton's blog.

I'll say same thing here I said there. If a student were to challenge me to prove evolution I would simply tell him or her to start by reading Darwin's Origin of Species. I would tell them that when finished with that task come see me and I'll provide them additional sources that contain additional evidence for evolution. Among them would be Jerry Coyne's Why Evolution is True, Richard Dawkins' The Greatest Show on Earth and a few other titles by Ernst Mayr and other well known evolutionary biologists. I'd even sprinkle in a few research articles on evolution published in peer-reviewed journals. 

But before all this I think I would direct them to read a few books on the nature of science, since asking me to prove evolution, let alone any claim in science reveals they don't understand science. Science is not an effort to prove anything. Science can't prove a claim, at least not in the sense in which the word prove is generally understand. Science is about determining the most plausible explanation based on the available evidence and data.
