i bet they werent even thinking about stuff they could put together for you from scratch, i bet they were just thinking you were asking if there were any specific vegan items on the menu ... like more processed vegan stuff or stuff marked as vegan. like lisa said, they didnt stop to think, "duh, we could make something vegan with basic fresh items!", but i bet if u ask, theyd oblige. :) sometimes you just have to remind them to think outside the box.

I'm planning to bring a little bit of my own food. I've found that most places that don't offer any vegan options don't mind if I munch on my own thing:-)
