    This was the first time I used ground flax seeds in place of the Vegan Gourmet cheese alternative in the faux ricotta cheese. I think this worked really well -- and is a much healthier source of fat. (Vegan Gourmet is 85% oil -- i.e. 100% refined fat -- not healthful). Here's my label: Nutritarian Vegan No Pasta Vegetable Lasagna (gluten free, no oil) ... "Noodles" Layers: Zucchini slices, Tomato Sauce ... Vegan "Ricotta" Layer: Crumbled Firm Tofu*, Blended: Silken Tofu*, Onion & Garlic, Fresh Basil*, Ground Flax Seeds* ... Vegetable Layer: Broccoli, Baby Spinach*, Mushrooms, Onions, Tomato Paste* ... (*)-organic
