Offal Cooking Class at Stir Cooking School
Hi all you DAECs out there—
There’s a great new cooking school in Highland called Stir. It’s quite cool—very modern, open and bright space with 3 learning stations, a demo area, a commercial kitchen in back and a full bar with a popular local mixologist that’s open to the public.
Katy Hume, the owner and chef, loves her some offal and invited me to do a class on April 10th at 2:00pm on the preparation and cooking of some choice gutty bits. How could I refuse?
Here is the menu I’m working on for the class, which is limited to 18 people:
- Grilled Lamb Hearts over Frisee-- Ever wondered how to clean a lamb's heart?
- Bolivian Style Bison Tongue with Aji Chile and Peas-- Did you know tongues need to be peeled?
- Veal Sweetbreads with Mushrooms-- A classic! Learn this detailed preparation.
- Crispy Pig Face Cakes-- Need I say more?
