Picnic & E-2 Talk with a Fire Captain at Fair Oaks Library

Hi, Everyone!

It's been awhile, so let's get this group 'back up and running!'

We have a special guest joining us, Aaron Webster,

a local fire captain who works for Metro Fire.

Aaron is a strong advocate of the Engine 2 program,

and has been inspirational to his fellow fire fighters at his engine company.

Learn more about Aaron here.

We will discuss Engine 2 diet/ lifestyle approach,

and maybe even watch a documentary! (TBD)

We'll start off with a potluck picnic:

VEGAN-style, and low-fat!

(That means: NO dairy, eggs, butter, cheese, meat, fish, poultry, or added oil)

**Please bring enough of your dish to serve 6.**

It would be REALLY fun to try recipes from the Engine 2 book or My Beef With Meat (both by Rip Esselstyn.)

**There are also many recipes on the Engine 2 website. **



*Note:  Stay tuned for updates--picnic may be outside at the park, unless it's too hot and we decide to move indoors.

    4 servings of 100% whole wheat pasta(i used whole foods 365 brand only 1.49 a pound!)
    4 servings Butler soy curls(half bag)
    1 can black beans (drained)
    1 cup frozen corn
    1 enchilada seasoning packet(simply organic brand at whole foods) (if using others watch out for dairy ingredients)
    1.5 cups of water
    1 can tomato sauce
    Couple TBSP nutritional yeast

    Topping options-
    Green onion
    Black olives
    Avocado to serve on top

    1. Boil and cook pasta like normal. If using frozen corn throw in water with pasta towards the end.
    2. Pour dry soy curls into a bowl of water 10 minutes as directed on package.
    3. Drain beans, pasta, corn and soy curls.
    4. In a large pot stir on medium heat a water, tomato sauce, enchilada seasoning packet and nutritional yeast.
    5. Once sauce starts to thicken (about 5 minutes) add in the remaining ingredients. Add in any optional toppings as well.
    6. Eat!

    I will be making some kind of salad dish. Turns out that I will have to work on Friday, so I will be driving from work and hubby will drive Dad over. I'm still trying to talk hubby into staying, so we will see if I am bringing one or two guests.
