Liz's Pesto Potato Salad Recipe

Vegan Pesto

1.5 cups of basil
5 garlic cloves
1/3 cup nutritional yeast
1/3 cup olive oil
1 cup of pine nuts or cashews
salt and pepper to taste

Blend everything in a food processor

Potato Salad

4 lbs. of potatoes
1.5 cups of Vegenaise
1/2 cup of pesto (maybe more depending on your preference)
3/4 cup diced onion
1/2 cup diced celery
1/4 cup lemon juice
1/2 Tablespoon of salt
pepper to taste

Boil potatoes whole for 20-30 minutes. Peel, cube, and toss them with onion, lemon juice, salt and pepper. Refrigerate for one hour. Add remaining ingredients and chill for several hours. Enjoy!
