Each year, the streets of downtown Columbia are filled with the sounds of salsa, meringue, reggaeton and grupero music and the enticing aromas of traditional Latin cuisine. Festival-goers line up for a chance to try authentic dishes like alcapurrias: an alcapurria is made from a doughy mixture of mashed tubers and vegetable roots (yuca, green bananas or green plantains) that grow on the island of Puerto Rico. The dough surrounds a center of heavily seasoned meat. Cooks spoon the meat into the center. Or try empanadillas (empanadas are made by folding dough or bread around stuffing, which usually consists of a variety of meat, cheese, huitlacoche, vegetables or fruits). Also available are pinchos (shish kabob), chicharon (pork skins), arroz (rice), habicuelas (beans), tostones (plantains) and carne frita (fried steak).
