Gusto for roman / italian cuisine

Our pal , Chef Vic Casanova, who used to be chef at Culina / 4 seasons hotel opened his own place and its always busy and food supposedly really good. He wants to do a special " Roman " feast for us. Like really doing his thing and whipping up some authentic roman eats. Obviously we'll have menu as it gets closer. Wines ofcourse to be good italians , tho certain rhones and cabs will work. Atleast med-high level. Vic took over the old AOC and he's opening a 2nd restaurant in few months , but meantime we'll come here and have a blast

    Like "from the city of Rome" or like Ancient Roman? :-) I once had Celistino Drago cook an entire meal from recipes in Apicius (80AD Roman cookbook author). It was pretty darn fabulous. That being said, "modern" Roman food is also delicious. It just doesn't include fried doormice in walnut sauce like they used to grub down.

      Cacio e Pepe (which I adore) is of the Roman but not ancient roman variety :-) noodles having come into Italy via Marco polo in the 10th century. They did have a lasagna like thing in ancient time. And polenta, but it was made from barley not corn (corn being a new world vegetable)
