Let me go through all the ways your post pisses me off.... I kid!!

But seriously, who are these dinosaurs you have to convince? Have they been living in caves or are they just small businesses?

It seems like you might need to cast a wider net on your crowdsourcing -- nearly had a damn you auto correct moment there! -- maybe the IxDA list or the UPA or IAI??

If anything, Apple's success is a direct testament to the importance of focusing on the software user experience. Here's a handy image of phones before & after the iPhone:

When they are off, most "smart" phones are pretty similar -- more-or-less the same hardware specs, feature lists, etc. The same is true for tablets. And laptops/desktops. Sure, there are many components contributing to Apple's success, but the software user experience is their key differentiator.

I think that works when demonstrating ROI for UI in the product sphere, but what about software, mobile apps and web applications?

Not to be too cute, but if you're giving a presentation on it, I would use a stock chart and revenue graph for Apple since the introduction of the iPhone.  Money speaks.
