I just bought on amazon.com a book called "Complete Guide to Vegan Food Substitutions" by Celine Stein. I haven't had much time to dive into it yet, but it looks like it has a lot of great recipes. Mainly, though, it has excellent suggestions on how to substitute vegan ingredients into a wide range of non-vegan recipes. So, don't throw away your "Joy of Cooking" or other pre-vegan cookbooks! Just convert the recipes. I think this would be a particularly good resource for folks who are new to vegan eating - I wish I'd had it three years ago!
