First of all, I want to eat at Kevin's house. He puts thought and effort into his meals that I only do occasionally.


Our Simplest "at home" meal is Amy's Bistro Burgers and Chocolate "Pudding"

Our quick evening meal is 1 slice of Udi's gluten free bread, toasted if I am ambitious, topped with catsup, mustard,
slices of Bubbies Kosher Dill Pickles (frig pickles with no sugars, dyes, etc.), onion slice, tomato slice, topped with Amy's Bistro Burger that has been dry pan fried about 5 minutes per side. If we are hungry, we add a side of veggies, salad, mashed potato, soup, or whatever.

Our favorite simple dessert is "chocolate pudding" -  melt 2 squares of Baker's Semi Swwet in microwave for 2 minutes. Dump 1/2 pkg Nasoya silken tofu (Kroger's frig section) into blender. Add melted chocolate, 2-3 drops stevia,1 T maple syrup. Blend at high speed for 2 minutes. Refrigerate. Add 5-6 strawberries on top. This is intensely chocolate. Since Gregg is diabetic, intense chocolate lets him enjoy with little sweetness. I dump and do not measure.

Our favorite party dish is "Haystacks"

Our favorite "at home" party dish works for non-vegan guests, fussy teens, etc, is haystacks, essentially a hearty salad meal each guest customizes by choosing their favorite fixings and condiments to build their own "haystack" - display separate dishes of brown rice, spicy beans, chopped lettuce, salsa, chopped black olives, guacamole, diced onion, green onions, diced tomato, other fresh veggies. Guests decide to place baked corn chips as top or bottom layer. This is a colorful meal where each guest can be creative as they choose their favorite fixings. Always ends up being a large healthy plateful of colorful food.

I'll collect the postings over the next week, and the most interesting post will be awarded a Food Fight! sticker from Portland Oregon's great vegan grocery.

 

I'll get things started:

 

My favorite vegan meal this month (where?) at the French Market Bistro on Gay Street is:

Vegan buckwheat crepes stuffed with spinach, artichoke hearts, tomatoes, and hummus, washed down with strong French coffee.

 

 

My favorite vegan meal this month (where?) at home is:

Moroccan Tagine with butternut squash, chickpeas, tomatoes, black olives, cumin, and turmeric, served over couscous, washed down with sparkling water with a squeeze of lime.
