Every year I try to add another new mushroom to the edibles I feel confident harvesting and eating...this year's is matsutake. It's been on my fungus radar for a few weeks now that it's season has arrived, and this morning I found some nice clumps of it growing under hemlocks near our house. Some had already opened, but many were still closed and bug-free. They seem very dense and weighty in the hand. Aromatic in the skillet, mild and meaty in the mouth. Looking forward to testing them out on pizza tonight at Broadturn Farm! And many thanks to David Spahr for his online resource:
