2-Day Wood-Fired Oven Intensive

This 2-day class will give you an intensive and comprehensive introduction to wood-fired oven management. But, don?t let the word ?intensive? scare you. This class is seriously fun!
From Friday evening?s pizza party to Saturday?s wrap-up, you will have the opportunity to build and manage the initial burn and monitor its progress.
You will also learn to:
How to properly fire your oven and manage the heat
Bake pizza and rustic European style breads
Roast and sauté (live-fire and no-fire) meats and vegetables
Make savory bread pudding, caramelized apple tart tatin, palmieres and more
The class includes instruction in dough preparation for pizza, rustic breads (sourdough and pre-ferments) and cinnamon rolls. Be sure to bring a hearty appetite!
The ?Le Panyol? 120 is complete and works beautifully. The kitchen facilities are fully functioning thanks to Wolf and Sub-Zero, some great Maine tradesmen, good friends, a very talented son-in-law and an artistic wife and partner.
The class fee is $300 (includes all meals) and is limited to 8 students. 50% deposit is required at registration.
