Just found an interesting site written by a fellow permaculturist. The site has info on how to make pectin (used for making jams and jellies). I'm always looking for ways to make things from materials at hand since I may not have the product available to me in the future. (Yes, I have the peak oil paranoia...)

I'll have another go at it again next summer as there are plenty of wild apples around here. I tried it a few years ago with crab apples, and it didn't work... Stay tuned!
