UPDATE #2: TIME CHANGE & NEW OFFERING:  ORGANIC KIM CHI

We have shifted the Meatshare time to 11am-1pm. 

B&Y Farms will also be offering their own crock cooked organic KIM CHI.

Kim chi is a Korean pickled cabbage.  It is made from B&Y's own organically grown chinese cabbage and garlic.  Other ingredients used are: organic celtic salt, organic chili powder, organic ginger, and organic fermented Thai fish sauce. 


"Why to try it: Kimchi (or kimchee) is loaded with vitamins A, B, and C, but its biggest benefit may be in its “healthy bacteria” called lactobacilli, found in fermented foods like kimchi and yogurt. This good bacteria helps with digestion, plus it seems to help stop and even prevent yeast infections, according to a recent study. And more good news: Some studies show fermented cabbage has compounds that may prevent the growth of cancer. In the spirit of keeping NYC Meatshare as green as possible, please bring your own containers to bring home your kim chi. 

Meet & greet from 1-2pm.  We are going to learn about how these paleo farmers raise their animals.  We are also going to learn about butchering choices, yield, and lots of other choices that come into play when you order your meat in bulk.

UPDATE:  B&Y Farms has decided to harvest one of their Ewe's.  So, they will now be offering fresh ground mutton & mutton sausage.  All of Judy & Allan's sheep have spent their whole lives eating the clean grass of their pastures.  Their large green pastures have never been treated with any type of chemical, pesticide, herbicide, etc. in the 20 years Judy has had the farm.

In the winter time, when the grass is under snow, they eat 100% organic healthy hay.  Occasionally, the sheep & lamb are supplemented with only the finest organic alfalfa.  This helps provide extra nutrients to help their wool grow thick, to keep them warm & healthy in the cold upstate NY months. 

  Ground mutton is great for grilling!  Enjoy fresh lamb burgers & sausages. We will have about 60 pounds of ground mutton & mutton sausage for sale.  Sausage options will include mild italian, hot italian, country breakfast, apple cinnammon, mild italian smoked, and kielbasa. 

Mutton organs will also be available along with shanks & bones.

In addition, Judy found a nice stash of the amazing apple cinnamon butter pork sausage from last year.  This is the most amazing sausage that exists. 


There will also be large chickens, small chickens, half chickens & quarter chickens, chicken hearts, livers, & feet. These are all the heritage breed poulet rouge chickens.  They are absolutely full of amazing flavor, no like the bland organic, free-range chicken in the grocery store. Check out last years reviews! 

Judy & Allan's chickens forage freely on their pasture -- with their lambs.  Their 60 or so chickens forage freely and eat all the nutrients from the earth and garden.  Since chickens are omnivores -- and need a feed to grow -- they, as well, are given a fine 100% organic feed. 

Half Chickens will range from[masked] lbs.  These are great for grilling, baking, roasting, etc.  and much less cumbersome in the freezer.  They stack very nicely. Great for 2-3 person meals.

Quarter chickens will be [masked]lbs.  These are also great for grilling, baking, roasting, braising, etc. and take up minimal freezer space.  Great for 1-2 person meals.

Chicken hearts & livers will be available. Since these chickens are only fed organic grain, these organs are clean, flavorful, and full of delicious nutrients.  Your body will thank you.

Cleaned chicken feet -- great for soup or your healthy pets.  These add tons of amazing flavor to your stock.  


Judy is also a cooking teacher.  She is going to provide a tip sheet with cooking suggestions.

Prices are as follows:

Ground Mutton & Mutton Sausage will be $10/lb - packaged in 1lb packages.

Apple Cinnamon Butter Pork Sausage - last year's favorite - $12/lb

(FYI -Poulet Rouge Chickens go for $6.99/lb and up Whole Foods -- and those are not fed an organic feed.)

Whole chickens will range in size from 3.5 -7 pounds.  Whole chickens are $4.50/lb. Bulk rate available.


Half & Quarter Chickens are $5/lb.  Please specify when you RSVP how many whole, half, & quarter chickens you want.

 


Chicken Hearts and livers will be $8/lb.

Chicken feet will be $6/package.  A package will have 6 feet.

Freezer clean-out prices will be:

$10/lb for lamb

$8/lb for pork

$6/lb for lard

$4/lb for offals, bones (including pig heads)

 

We are doing a Summer Farmer's Market to include small chickens, veggies, and a freezer clean-out sale all from B&Y Farms in Spencer, NY.

The heritage breed Poulet Rouge chickens are raised free-range on their never sprayed or treated land. The chickens roam freely and forage for worms and bugs. They are also given a very healthy, 100% certified organic feed to supplement their diet. The chickens are fresh (i.e., they are currently roaming the acreage of B&Y farms -- and are set to be harvested in 2.5 weeks).

The veggies are all organic as well (although the farm is not certified organic). No herbicides, chemicals or fungicides are used ever. Veggie options will hopefully include (depending on Mother Nature of course): zucchini, green beans, lettuce, broccoli, basil, parsley, onions, cucumbers, summer greens, kale, and Chinese cabbage.

 

There may be fresh blueberries and fresh cut flowers as well.

Freezer clean out options will include: pork roast, ground pork, ground lamb, split pig heads, kettle boiled lard, and MORE!

 

Estimate freezer prices:

$10/lb for lamb

$8/lb for pork

$6/lb for lard

$4/lb for offals, bones (including pig heads)

All freezer meats have been cryo-wrapped, so as long as seals are intact, the meat will thaw fresh (aka - without freezer burn). The farmers have discounted accordingly. They are hoping to empty out the freezer to make room for the upcoming harvest. These meats were harvested November 2010-Feb 2011.

Prices will be $4.50/lb chicken. Bulk rate $4.25/lb for 3 or more chickens.

 

Veggies will be priced lower than green market prices.

 

Your $26.57 fee covers a $1.07 paypal fee and a 50cent contribution to the doorman tip. Please bring cash to pay the farmer for any additional meat you may want to purchase.  If buy less than $25 worth, they will refund you that day.

 

You will have $25 credit to shop.  Please let me know how many chickens you want when you RSVP.  You are welcome to come that day even if you don't RSVP to see what you want, but those that RSVP will have first claim to the chickens.

 

This meetup will be in my apartment.  Please note I have moved, I'm in the same building, but have moved to a much larger space so we will have a little more room to spread out.

    There will be 2 types of kim chi: Cabbage & Korean White Radish
    As well as all the organs and bones from the mutton.

    Important! I will have plastic bags, but since it will be very hot, I recommend a cooler. Also, there are about 30 additional people coming for the farmer's talk at 1pm. Some of them may come early to purchase meats that the meat share has not claimed. Please try to get your meat by 12:30 (unless you let me know ahead of time- in which case I'll put your goodies in my personal freezer) to ensure no one snags your reserved cuts. I will do my best to ensure this doesn't happen.

    Kim chi is $5/pint & $10/quart. The farmers aren't going to pick veggies until the night before -& they are only going to bring what is ready & will survive the trip. So, veggie & fruit prices will be available the 23rd. Prices will be reasonable (I.e. Less than organic greenmarket prices).

    The Kim chi is first come, first serve. So, if you let me know you want some, I'll reserve a jar. Also, I have some containers for Kim chi, but not enough, so please a one. I'll ask the farmer on the rib pack sizes, but assume .5-1 lb. I'll add up your total on meats are day. I try to get prices so you can estimate.

    Hey guys - I have a correction: Kim chi is kettle FERMENTED, NOT kettle cooked. The fermentation is what produces the lactobacilia. There are also claims that it prevents various types of influenza - H1N1, swine, and bird. I'll try to dig up some more info. prior to the share on the 23rd.

    The livers, hearts, & feet are being sold separate from the chicken. Heads will not be available as the butcher won't clean them.
    I'm not sure about finished foot size -- as the chickens still have 2 full weeks to grow. Last year they were above average in size.

    Are the whole chickens coming with feet, liver/heart/gizzards and head? I'm assuming its this way at least with the liver/heart and gizzard. Are the chicken feet a generous size as 6 for 6 bucks a bit overpriced IMO.

    You can also order half chickens. Half chickens will range from 1-3 pounds.
    Half Chickens are great for grilling, plus they stack much easier in the freezer.
