Spring Lake Farm is going to provide us with a steer on July 21st. Spring Lake has 2 great websites www.springlakeny.com and healthymeat.org. Ulla Kjarval, the farmer's daughter also writes a farming & food blog with several recipes to complement the meat her parent's raise.
Our beef has been completely grass-fed. Ingi Kjarval, our farmer, has been cross-breeding his cattle to help build a smaller, sturdier steer that does well in upstate NY on grass. Our cows are part Simmental, Hereford, Angus & Highland. This is beef that grazed on early summer/late spring grass (before the drought). This is the best grass and makes the most tender beef.
Each share is going to be 1/12 of the steer and about approximately 30 pounds of beef and beef parts. I will split as evenly as possible as I can among the various parts. The cost of each share is $181.70 - $168.50 for the beef, $5.70 paypal fee, $5.50 for delivery & meet-up fees. On average, this will be $6.05 a pound. Since we are buying whole animals, the cuts will not be even and might have slight variation. Unfortunately, this makes division slightly troublesome so we cannot ask them to deliver individual shares. I will need to see the cuts so that I can split it up. However, if you want a quarter and want it delivered, please message me and I will try to arrange it with our farmers. If you want more than 30lbs, please RSVP for yourself +1,2,3,4, etc. For example, if you want 90lbs -- RSVP for yourself plus 2 guests. Your payment will be (3x$181.70) = $545.30
If you want half a share: you can use our meatshare forum to find someone to share with or feel free to message me and I will pair people up on a first come first served basis.
Also, I spoke to Temma and she is picking up another steer on Saturday. There should be more available if we are oversubscribed.
**update**: everything is going be split into 23 equal boxes. There will not be a mad dash for boxes. Everything will be pre-divided when you go to pick it up. Boxes are labeled 1-13 and A-K. I have randomly assigned the appropriate boxes. The farmers are first going to Union Square around 3pm and then to Astoria. Plan on 3:15 for pickup in Union Square and 4 in Astoria. Please arrive at 4 to help unload Marija unload the car.
