I'm wondering why we are doing a deposit in the first place.  If I'm handling the sales from this end, then if a person gives me their order, I simply can weigh it up on our scale, total, and then invoice them with paypal.  If they come to the market and pick up their fully paid meat, then, they will be more likely to shop some more perhaps...
 
If they pay in full, aren't they more likely not to stand us up?
Plus, then none of us money handlers have to do any math at the point of sale, especially if we are sleep deprived, or have a line of customers, or bad weather, etc.
