Hello Gabriel,

I'm also on the south side (Hyde Park).  I'd be totally into building some cob raised beds.
 I haven't actually built with cob before, but I've read about it and gone to a workshop to create it.

Keep me posted on when you'd like to move this project forward.  I'd love to be part of it.
