Having seen the light with raw food myself, I'm wondering whether the community would appreciate raw olives. You see - 20 years ago I bought an olive orchard in Spain. I'm now experimenting with ways of curing the olives without salt, and no heat sterilizing process. I'm getting ok results, and in the near future I'll be looking for volunteers to sample my produce. So far not many people appreciate these olives - they certainly don't taste like the supermarket type (apparently they are void of nutrition). I have eaten loads and have never felt sick or had any digestion issues. There are ongoing arguments as to whether liquefied oil is actually 'good for you', or just baseless sales hype. However, I'm convinced some people will appreciate plain raw olives. Later, I'd like to market them. These olives will be sold by me, the grower, with no middle-man, fancy labels, or expensive certification. It would be amazing if, after so many years, I could actually bring some produce to market.
