Dr Ian Fisk
University of Nottingham Food Scientist
The taste, aroma and mouthfeel of food is key to liking and positive past experiences often drive purchase decisions. Within the lecture you will be taken on the journey of an aroma compound from production through to consumption and perception, highlighting the tools and tricks that the food industry may use to enhance the eating experience and discussing cutting edge technology currently being used to explain how we perceive the flavour of food. This is especially relevant with the upcoming seasonal break.
