VCs are forced to come in when risk is much higher. You can "work for a startup" and "get options" at any stage, it doesn't have to be early stage. Of course generally risk is proportionate to reward. Not many Google or Facebook millionaires came in at a time when success of the company looked anything like guaranteed.

i say look for work that's interesting, challenges you, or pays well.  options should be the sugar on top.  if you luck out, great!
