While not technically in South America, Project Bona Fide has a great PDC in Nicaragua.  It happens in February, a beautiful time to be in the Nicaragua.  Project Bona Fide is a permaculture ranch on the island of Ometepe, which is located in the center of Lake Nicaragua, one of the largest fresh water lakes in the world.  The north half of Ometepe is formed around an active volcano which makes for incredible cloud formations that greet each morning at Bona Fide.
 
Well worth a visit if you can't make the PDC.
