Many of you are familiar with our wonderful food and know what it means to be made with Local Organic Vegan ingredients, or LOV!? We have been working very hard for almost a year developing my model for a sustainable restaurant. This is only the beginning, and we have a lot more work to do.
Our idea is to have a restaurant that is part of a complete food cycle, growing much of its own food like herbs and greens itself in an urban garden, and then being connected to a large rural farm by biodiesel truck. This allows for a closed-loop energy cycle, as it's called in Permaculture. There is no waste, and all potential waste is returned to the system as a new input, like composting kitchen scraps or making biodiesel.
By voting for our idea, we have the chance to win $10,000 to cover the expenses of developing such a complex business model. It will be used to develop the current operation by expanding into wholesale production as well as the expense of working with professionals to develop a viable business plan to attract major investment for buying a building in NYC and a farm outside the city.
