Can you verify the paper type it thinks it is using? That could explain both page count and no output behaviors.

The hows and why's are not as important as eliminating them as the cause.  If the print spool is getting mixed signals for some reason when working with a PDF document, there is something in those properties or attributes it is not interpreting correctly.  I have an old printer that if I didn't install post-script on the computer, I couldn't print pdf files.  Along with other problems. 

You stated the system is doing automatic app-get updates, maybe there was a faulty update that affected the print spool.
Like I said, eliminate the spool, try printing directly to the printer.  If it not too much work, maybe uninstall and re-install the software/drivers.  What have you got to loose?

Try taking the spooler out of the equation:
  • 1. Go to printers/devices.  2. Right click printer and select 'Printer Properties'(not 'Properties').  3. Click on 'Advanced' tab.  4. Select 'Print Directly to printer.

See if printing directly brings different results.

It could be something specific to a property generated inside a PDF that is now problematic to the printer as the driver got corrupted or changed.  You know, those properties inside files that are NOT as accessible  as those most people see.

Perhaps, try uninstalling and re installing the driver, make sure you have the latest known good driver/software for the printer.  See if there may be a firmware upgrade for the printer as well.

Very odd, as acroread uses Adobe's internal convertor, GIMP uses Ghostscript, and the default viewer (Evince) uses poppler.

3 different engines, with 3 different interfaces, giving you the exact same failure?
So root cause asks what are common elements?
Multiple clients, 1 printer queued through one server...

Time to make a test matrix.
