Subdomains are the part of the name prefixing your domain:

A "CNAME" is just an alias to point a name to another name.  I.e. my example below.  Otherwise, you use an "A" record to point to the IP address of the host.  "A" records are slightly faster, since you go from name to IP address.  With CNAME's, an additional DNS lookup is performed to look for the A record of resulting CNAME.  At some point, you need to find an IP address!

If most of the domains are hosted on the same server, you can wildcard it:

A record:
*    A

CNAME record:
*    CNAME

That can save you a lot of records in the zone file, and save you time updating your zone just to point another record to the same place all the time.  The wildcard will match any subdomain that does not already exist in your zone file.
