If you have seen slug slime it is probably slugs. They will cut a soft green stem. I see it so often. I had the worst time getting Canada lillies established because slugs were cutting them off. They certainly like cabbage, beans, etc. and seem quite fond of my peppers as well. I go on slug patrol every day. They invade my shiitake. I stab them and wait for their friends to come and eat them then stab them too. I'm actually getting fewer now. They can reproduce asexually so you should get every one you see. They seem to follow each other's slime trails so you may consider removing the trail or planting elsewhere.
