Thank you to my friend Dr Connie Sanchez for sharing these recipes with me!

Kale Salad – 

v    1 bunch Kale
v    1 ½ avocados
v    1 tsp sea salt
v    ½ lemon juice
v    pinch cayenne pepper (optional)
v    1 tomato (diced)
v    Basil  (chopped)
v    ½ cup mung bean sprouts

Chop kale, place in bowl, add 1 tsp salt and add the juice of 1/2 lemon.  Massage the kale (mix with your finger until the kale softens), add the rest of the ingredients and mix in bowl and enjoy.


Chia Pudding (not sure if this is what that is what it's called)

Soak 3 dates in water over night

In the morning soaked 2 tbsp of chia seeds for 15 minutes in 3/4 cup water

Throw 1/3 c raw cashews into your vitamix, along with the 3 soaked date (pits removed!), chia seeds, with the soaking water, a pinch of cinnamon and blend until smooth. Dish up into a bowl and top it off with lots of blueberries.

Equal amounts of red pepper, apple, tomatoes
Some purple onion
The dressing is avocados and olive oilPinch of cheyenne pepperPinch of salt (sea salt or himalayan salt)
