I got home and was going to read my papers, and then I realized that I had left them! Oops! Well I am glad you posted this for me to read! I have my water and sugar with the kefir in the fridge now. So that is supposed to be fine for a while in the fridge right?
Yes, you should be good for a few days if you have them in water with sugar!
Only for a few days? How long is the max that I have?
You are good for about a week before you need to add more sugar to the jar. The other page I posted tells you how to freeze your grains if you want a long break.
So I fermented my kefir for 2.5 days. The result still is sweet and has a kick to it. Will it continue to ferment in the bottles?
Yes, it will continue to ferment once you harvest it into a bottle on your counter. If you want fiz, use a tight fitting lid. Check it every day until you get the result you want. Also, your grains are just waking up good, so the next batch will have more kick (less sweetness) and ferment faster (if temps are about the same).
