This would be a limited participation class (probably no more than 10 - 15)
Basic sauerkraut instructions would be given, and basic sauerkraut would be started, and each participant would have a started sauerkraut to go home with (participants would be required to bring a glass quart jar, a large head of cabbage, and a 16 oz. bottle of spring water -- other ingredients would be explained and provided) There would be a fee, over and above whatever participation fee the meet-up requires, of $15, for the additional supplies and materials.
Information would also be provided for making raw vegetable pickles, using the same basic method as the sauerkraut.

Why don't we form a club, and then meet at a library in Manhattan everyone is close to, once a month, to exchange our favorite recipes, books, . etc.
We even might be allowed to bring some food.
I would invite you to my library, but I live in northern NJ, which might not be convenient for most.
I have been a raw vegetarian for over 10 years. I have a lot of info on my site and blog, if anyone is interested.
Too bad we missed the warm weather - we could have met in Central Park. Next year then...

I'd like to make this meetup a reality.
Sauerkraut is a staple in my house, and I love experimenting with different versions (my favorite is the "three day recipe"- you don't have to wait long, and the flavor is amazing!)
It would be great if those who already make raw sauerkraut regularly shared what we know in a workshop with people who want to learn. It would be a learning experience for all of us, I am sure.
I can meet at night.
I know one or two places to meet in Manhattan.
