Squeeze the juice of 1 lemon into the Vita-Mix blender. (I used the dry container for this recipe.) Add 1/2 cup raw honey and blend. Cut up 1/3 cup Melissa's crystallized ginger into small bits and blend until very small pieces remain. Add 1/2 cup dried apricots, cut-up and blend well. Add 1/2 apple, blend, adding small amount of water, if needed.

Begin adding dry ingredients: 1/2 cup almonds (blend to preferred chunkiness), 2/3 cups dry oatmeal, 1 TBS. ground flaxseed, 1 TBS. whole grain Teff.
—end consistency needs to be firm enough to roll into balls, but I prefer as moist as possible. To attain this texture, you can add more oatmeal, this time oat flour (oatmeal ground in Vita-Mix) or roll balls in more ground flaxseed.

Roll into small balls, and end by dipping one side of ball into chia seeds. Store in frig.
