White Christmas Soup www.hacres.com Alice Harper
* 1/2 cup Zucchini (chopped)
* 1/2 cup Red Pepper (chopped)
* 1/2 cup Tomato (diced)
* 1 tablespoon Garlic (minced)
* 1 tablespoon Dill (minced) (If available, fresh is best)
* 1 tablespoon Parsley (minced) (Fresh if possible)
* 1 tablespoon Green Onion (chopped)
* 1 teaspoon Jalapeno Pepper (or to taste - this gives the soup heat) Can Omit
* 1 ear of Corn (cut from the cob or about 1 Cup frozen corn, thawed )
* 1/2 cups Walnuts (soaked for 4-8 hours)
* 1 1/2 tablespoons Miso (white or dark) or Bragg Aminos.
* 1 cup water (add more if desired) Can be hot - but not boiling water .
* 1/2 cup Extra Virgin Olive Oil
* Celtic Sea Salt, as needed
In FOOD PROCESSOR, put all Soup Base ingredients and pulse for a few seconds until all are coarsely chopped. Add corn and pulse for a few times more. DO NOT OVER PULSE as you want your vegetables to be chopped and not liquefied. Put these ingredients in a bowl and set aside.
In BLENDER, put Soup Broth ingredients, and blend until liquefied. Pour over vegetables, stir, and serve or let sit for a while to develop more flavor. (Before serving, you can sprinkle some more chopped green onions on top of soup.) ENJOY! Keeps in refrigerator for about 3 days. Gently heat on stove until warm or in dehydrator.
Dressing Roberta McMillan
1 # Carrots
1 Whole onion
4 Stalks Celery
2 - 4 Tbl poultry seasoning
Blend in food processor to desired consistency.
Great as a dip, dressing, in a wrap. Only your imagination limits you.
Cranberry Salad Roberta McMillian
In blender add:
1 C Cranberries
1 C dates Pitted & soaked in 2 C water for 10 minutes. Drain and discard water.
1/2 tsp allspice (can omit)
2 tsp cinnamon to taste
1/4-1/2 tsp ground cloves
2 tsp coconut butter OR 1/2 Avocado, mashed
1/2 tsp Green Stevia to taste (Optional)
Blend well together.
In separate bowl, add:
2 Pears, cored & chopped
2 Apples, cored & chopped
1 C pineapple, chopped
1 C walnuts or pecans, Chopped (Optional)
Pour blender contents over fruit & mix well. Great to serve at Thanksgiving and Christmas for dinner.
Macadamia Date Pie Naomi Sanchez
4 C macadamia nuts
2 C dates
Juice of 1 orange
1 tsp salt
1/4 tsp butterscotch OR vanilla extract
Blend macadamia nuts until finely chopped and transfer to a bowl. Blend dates & OJ in processor & add to the macadamia mix. Mix thoroughly together W/salt and butterscotch extract.
Spread the crust out thinly on a normal size plate. Finley slice bananas or favorite fruit and spread on top of macadamia date crust. Next cover the fruit with another layer of mac/date mix.
Decorate pie with thinly sliced oranges and nuts or favorite fruits. Serves 8-12 people
Candy Gravy Mix (?)
1 Small bag frozen Lima Beans - thawed
1 bunch of green onions
1 hand full of cilantro or parsley
Drizzle of olive oil
About 1 Tbl lemon juice
Dash of Worchestershire sauce )(Optional)
About 2 cups of Black walnuts.
About 1/2 Tbl apple cider vinegar.
Dill to taste.
Process to desired consistancy.
