Vicky's Polynesian Soup

1 ½ cups fresh carrot juice (not bottled or canned)
1/4 cup carrot pulp (leftovers from juicing)
½ cup fresh basil
¼ cup fresh mint sprigs
1 tsp minced jalapeno pepper
1 tsp minced fresh ginger
1 med. clove garlic
1 ripe avocado
2 tsp olive oil
½ tsp sea salt
½ cup chopped red bell pepper
¼ cup chopped onion
1 tsp or less jalapeno (to taste)

Blend well 3 minutes or more.
Serve immediately.

Serves 2



Cream of Tomato Soup

• ½ cup soaked sundried tomatoes (soaked for at least 30 minutes in 1 cup h20, add h20 also into blender)
• 5 med. organic tomatoes (or 3 ugly ripe heirlooms)
• 1 ripe avocado
• ½ cup chopped onion
• 1 med. garlic clove
• 2 cups nut milk (h2o blended with raw nuts and strained through a strainer or nut milk bag. I prefer to use macadamias, but cashews are also good)
• 3 tbs. nut solids (leftover from milk straining)
• ¼ cup extra virgin olive oil
• salt, red cayenne pepper, and black pepper to taste (cayenne will give the illusion of hot temp. soup)


Add more h20 if needed to blend. Blend well for at least 3 minutes. Serve immediately.

Serves 2
