I like the combination of Jade for HTML and Stylus for CSS. They really strip HTML and CSS down to the bare essentials. It is great not to have to worry about mismatched closing tags for example. Jade could be better at error reporting when you do have a problem, though.

I think we are moving to mustache. One thing about templating:

1. Almost anyone can write a templating engine, so almost everyone
does. It's a form of bikeshedding.
2. Templates don't actually get used that much for a lot of modern web
applications, so even a really basic engine is usually good enough.
You could probably get away with using printf as a templating
engine...
