I enjoy a myriad variety of foods, but what I am really impressed by is when a company or restaurant puts enough love and passion into their dishes that you cant walk away from the table without feeling like you've just tasted a masterpiece. I enjoy Sushi/Japanese, Italian, Vietnamese, and seafood especially.
Butter is quintessential, you can't make a good roux, or finish a sauce without a good pat of really decent butter. I usually have several kinds in my fridge at all times. Bacon! Its delicious, in any form. I really enjoy experimenting with the different types to attain specific flavors in my cooking, I would be exceptionally perturbed if bacon were to become unavailable. Products of fermentation; The use of wine/beer/liquors in cooking and baking is well known, but the same process also nets us pickled items, bread, yogurt, miso, and so many other products; I would be hard pressed to cook without fermentation.
I enjoy cooking for myself and others, however I am not a professional.
