"Eating Healthy Panel Discussion" organized by Prof Mindy Walker

Richard Lewis has been kind enough to help me with this:

We will provide a healthy eating discussion panel.  We are providing an opportunity for you and our panel to share thoughts and experiences, and to hear the ideas of others.   The goal is to provide a cooperative forum to learn from others’ knowledge and experience in a friendly discussion.

The panelist are:

 - Dr. Mindy Walker - Rockhurst University, Vegan and Biology Professor

 - Dr. Meredith Gianforte - LifeWorks Integrative Health,

http://www.lifeworkskc.com/

- Caleb Howard - Relentless HCT,  Health and Wellness Coach, and Bodybuilder,     http://www.relentlesshct.com/

 - David Pedergrass - Kansas University, paleo diet advocate

David Pedergrass was recently in the news and is writing a new book "The Smartest Loser" in losing weight.  http://fox4kc.com/2013/11/11/popular-paleo-diet-takes-a-caveman-approach-to-modern-meal-time/

I enjoyed the presentation, discussion and questions raised throughout the meetup. I've been reading a lot lately about herbs and spices and that many centuries ago they weren't used just to season the taste of food but were used as medicine as well. Here are a few links for those interested on the amazing properties of ginger root. Turmeric is another amazing spice.

This was fabulous. Thanks to all of the panelists for their insight. And thanks go Cam and group members for sharing their dietary journeys.

And now for the fruit ball recipe (vegan AND paleo):

    3/4 C unsweetened shredded coconut
    3/4 C dried cherries
    1 C dried mango
    1/2 C dried cranberries
    1 C sliced raw almonds

Run first 4 ingredients in food processor with steel blade for full 1 minute. Add almonds and run for another minute. Squeeze and roll 1 T of mixture into a ball. Refrigerate. Enjoy :)
