Shirataki yam noodles are available locally but only in the Japanese specific markets. I've seen them at both Nijiya markets (one in Mt View) and Mitsuwa off Saratoga Ave in SJ. Never tried them but I've heard they have seaweed in them and they are like tofu noodles in texture. Have fun! Ron
