What is your favorite sushi restaurant and your favorite fish / roll?

I love love LOVE Unagi. But I always attempt to try something new with each new restaurant I visit. I ended up falling in love with Uni (in Las Vegas) and Escolar (in Woodbury) this way in the past year. My favorite sushi places are always once that are close by where the staff and I get to know each other on a first mane basis.
