Learn to preserve your harvest by canning it.

I learned how to can produce when I was growing up.  I will take you through the steps to do both pressure cooker canning and hot bath canning.  We will be working with tomatoes as our basic ingredient.  We will make tomato sauce and will be canning whole tomatoes.  If we have onions, herbs, zucchini and green peppers, we can also make spaghetti sauce to can.  These methods will apply to any recipe that you want to preserve in a jar.  In order to cover the cost of the jars and lids, a small fee will be charged per jar that you take home.

 

 

The Urban Farmers Coop events are working/learning sessions where we all pitch into a project at the hosts location.

Here is what we do:

  • We meet to help out a fellow host farmer
  • We do some work, exchange ideas and learn something at the same time.
  • We bring food from our gardens so we can share with each other the wonderful foods we are raising.
  • After the meeting we all take home something that we did not bring.


If possible please bring any of these items:

  • Bag for collecting harvested food
  • Gardening tools- Shovel, trowel, gloves etc..
  • Some food items from your yard to exchange with other member (if you have any)
  • Potluck item that either contains something that you have picked from your yard/urban farm-- OR -- something that you would like in the future to come from your yard/urban farm."
  • If you do not have any of the above then it is OK-- just bring yourself and some good positive energy.

 

AGENDA

1) A bit of work

As people arrive we will all participate in a group working activity in the hosts location.

2) Demo and instruction

During the work portion we will have a short break out period to present some new material and gain some farming/gardening knowledge.

3) Pot Luck and Socializing

Finally we will all spend some time to socialize and eat the wonderful food from our gardens.

During the pot luck we will have time to discuss the following:

  • Q & A about gardening/ farming. Anyone can ask anything about a gardening or farming topic for others in the group to give their insights.
  • News and updates from our members: each member share progress on urban farming projects.
  • Ongoing discussion on our Urban Farmers coop group.
  • Crop Sharing-- Everyone that has harvested something from your yard please bring it and exchange it. Take what you DID NOT bring.

    We got so much canning done! Did anyone get a final count on how many pints of figs and tomatoes we canned? I can hardly wait to taste Jon's fig butter.

      So sorry to hear that you had the wrong date. We had a lot of fun, and I'm sorry you missed it. I was back to canning today and put up 28 pints of mostly tomatoes products. My feet are sore! I'll miss the next meet-up, but hope that we can meet at another one soon.

    I canned 12 pints of tomatoes yesterday, but didn't do everything "just right." Pot wasn't tall enough to cover the tops of the lids, but I put them in the freezer and left one jar out to test them. If that one doesn't spoil, I'll take the others out. I found organic tomatoes at the farmer's market for $.50/lb, the "over ripe" ones (just soft), which are the ones I wanted. Also got some plums and nectarines I will try to make jam out of later this week. So fun :-)

      hi jon, not sure, lol. I know it wasn't one of the coconut sugared jars. here's the thing. they didn't tast overly sweet. I had one of your figs before canning and it was so wonderfully sweet it actually made me think of cotton candy. lol! don't ask cause I don't know. anyway, I'm not sure if the sweetness was from the figs or sugar. it was one of the most beautiful sights ever: a bowl of steaming hot oats with a couple of fresh canned figs and juices from the garden with a sprinkle of cinamon. yummo!

    This was such a fun event for me. I realized at the end of the day that I hadn't picked up a knife all day to help with all the food that we cut up, but I ended up with aout 2 dozen pints of food Thank you so much to everyone who contributed their time to this wonderful event. I had a blast!

    I have a large pot that can hold 4 to 5 smaller pint sized Ball jars.
    It would take a lot less time to get the water hot. I can bring a hotplate.
    Do we need extra power strips, extension cords?

    For anyone who needs jars: I rarely see jars in stores, and never on sale, so...Summerwinds Nursery in Palo Alto had quart regular-mouth Ball jars (with lids and rings) on sale this week for half price. With tax, it comes to $6.80 for 12. I was told they'd be on sale until they ran out. When I was there, I saw about 10 boxes. They had a couple other types of jars, but those were not on sale.

      That would be great if you can bring them. I only have two burners that are large enough to use for canning, but we can set one canner aside to cool as we start the next one cooking. It would also be good for people to see different kinds of pressure canners.
