    Trying to get the hang of posting comments on this site. Here's an alternate mac and cheeze recipe featuring cashews. I like to add garlicy panko bread crumbs with a spritz of olive oil as a crunchy topper. Here goes...

    1/2 C plus 2 Tbsp raw cashews
    1/4 C nutritional yeast
    1 tsp onion powder
    1 tsp salt
    1/2 tsp garlic powder
    1/16 tsp white pepper
    1 plus 3/4 C non-dairy milk of choice
    1.5 Tbsp arrowroot powder
    1/4 C canola oil
    2 Tbsp white or yellow miso paste
    1 Tbsp lemon juice
    8 oz cooked pasta of choice

    Pulse cashews in processor until finely ground.
    Add nuritional yeast and spices... pulse a few times to combine.
    In heavy saucepan combine milk, arrowroot and oil. Bring to a simmer and stir for 10 minutes until thickens.
    With food processor running, add milk/oil mixture to cashew mixture. Blend for 2 minutes until creamy. Next blend in miso and lemon juice.
    Combine sauce and cooked pasta.
    Bake if desired or serve as is.
    DEELISH!

    Thanks Kerry! It was great to meet you and everyone else yesterday. I was looking for that cheesy macaroni that Ben was talking about. I'm not sure if it's the same one, but I found one in my copy of "The Compassionate Cookbook" by PETA. Ben said he thought is was in "How it all Vegan" which I also own but I lent it to a friend, so I didn't search for it there. Just wanted to recommend the PETA book to since I couldn't remember the name of it yesterday. :)

      The cheezy sauce I use is from Veganomicon by Isa Moskowitz and Terry Hope Romero. You also might find it at theppk.com.

      Another similar sauce from Isa Chandra is in her PPK recipe called "mac & shews" It includes sauerkraut blended into the sauce which gives it a cheese-like tang. Sounds like there was a fun conversation going on at the other side of the table Sunday :-)

    Hi everyone,

    So nice to be together yesterday. Here's the veggie pate recipe, as promised. All the grating is labor intensive, but well worth the effort!

    Grate:
    1 onion
    2 potatoes
    1 carrot
    1 branch celery
    2 garlic cloves

    1/2 C unsalted sunflower seeds
    3/4 C whole wheat flour
    1/2 C nutritional yeast
    2 Tbsp. olive or canola oil
    2 Tbsp. lemon juice
    1/4 C tamari
    Salt and pepper to taste
    Spices to taste (basil, oregano, celery seeds, sage, thyme...)

    Mix all ingredients together and process until smooth.
    Pour into lightly oiled 8X11.5 baking dish (or 9X9 for thicker pate)
    Bake at 350 degrees for one hour
    Cool and slice... makes an EXCELLENT sandwich with sprouts, mixed greens, a little olive oil and vinegar on whole grain bread!

    I enjoyed meeting everyone yesterday and look forward to future gatherings!

    I know I'm brand new to your group, but there is a gathering for pigs at 10:00 at Common Grounds in Branford to appeal the the representative there to help stop atrocities toward pigs. Is there any interest in going there first and then going over to The Edge afterward or staying at Common Ground? I think it is a wonderful worthy cause to which many of you can relate and I just wanted to throw it out there. If not, I will go there first and then meet up with you guys at the Edge around 1130. You sure could do a lot of good by showing up at both ;). If anyone needs a ride please let me know. Thanks for your consideration. I look forward to meeting you all.

    I can't promise, but I may come. I'm housesitting nearby that day. What do they offer for brunch? Pretty much the only food I buy in the cafe is cupcakes. Their hot bar is usually kind of sad. ---kate
