French Meadow in St. Paul

Hi everyone! Please join us for a vegan dine out at French Meadow in St. Paul. They have some excellent options including vegan chili, sandwiches, salads and entrees. This is a great opportunity for vegan and non vegans to learn more about delicious vegan options in our area. PLEASE READ NOTE:

*If you are willing to pitch in a couple of dollars to help cover the costs of running the Meetup, we would greatly appreciate it, but no one will be turned away due to inability to pay.

*Please also note that while everyone is welcome no matter where you are on your vegan journey, this is meant to be a fun pro-vegan social event. We're happy to answer questions about veganism and have discussions, but this is not the forum for debates or arguments about veganism. By attending we presume you are actively pursuing or seriously considering vegan living.

    Creamy Avocado Pasta
    8 ounces uncooked pasta
    1 to 2 cloves garlic
    ¼ cup packed fresh basil leaves, + more for serving
    1 to 2 tbls fresh lemon juice
    1 tbls extra-virgin olive oil
    1 ripe med. avocado, pitted
    1 to 2 tbls water
    1/2 cup chopped grape or cherry tomatoes
    ¼ to ½ tsp fine-grain sea salt
    black pepper
    Lemon zest & red pepper flakes, for serving
    1. Bring large pot of salted water to boil. Cook pasta according to package.
    2. Make sauce while pasta cooks: In food processor, combine garlic & basil. Pulse to mince. Add lemon juice, oil, avocado flesh, & 1 tablespoon water. Process until smooth, stopping to scrape down the bowl. If sauce is too thick, add another 1 tbls water. Salt & pepper to taste.
    3. Drain pasta & place it back in the pot. Add avocado sauce & stir until combined. Gently stir in chopped tomatoes. Rewarm pasta if it has cooled slightly, or serve at room temp.
    4. Top with lemon zest, pepper, & fresh basil leaves. Offer red pepper flakes for those who like heat.

    Chickpea Tacos
    1 tbls olive oil
    1 small yellow or red onion, finely chopped
    2 cloves garlic, minced
    1 15-ounce can chickpeas, drained and rinsed
    1 tsp ground cumin
    1 tsp chili powder
    1 tsp paprika
    1 tsp dried oregano
    Juice from ½ lemon
    1 cup raw spinach or Swiss chard, coarsely chopped
    8 hard taco shells or whole wheat tortillas
    2 tomatoes, diced
    1 avocado, diced
    Hot sauce (optional)
    Chopped fresh cilantro, for garnish
    Add olive oil to a large saute pan over medium heat. Add onion and garlic. saute until the onion turns translucent, about 5 minutes.
    Add chickpeas, cumin, chili powder, paprika, oregano and lemon juice to a pan, and stir to combine. Mash chickpeas with a fork so that they don’t roll out of the taco shell.
    Add spinach and stir to combine. As chickpea mixture cooks, add water to pan in small increments to keep ingredients from sticking and to make it a bit saucy. Cook 7 minutes or until sauce is your preferred thickness and dish is heated through.

    Incredible food. Melanie was a great meet up leader. The location was wonderful and I liked the table layout. Wish it wasn't so hard to hear though, that's my only complaint. Might be quieter in the day.
